Manifesto
sustainability rituals
Terroir is not just soil, climate, or geography. It is the sum of the hands that shape it, the wisdom passed through generations, the shared culture and labor that give it meaning.

At Teruar, sustainability lives in craftsmanship, long-term collaborations, and a collective consciousness. It begins with the producers we partner with season after season, the foragers who bring nature’s offerings to our table, the winemakers who bottle the essence of this land, and the dedication of the team that stands by our side every day. It is reflected in the artisans who shape the plates we serve on, the glasses we pour into, and the wooden platforms that hold our food.
Food waste is not an afterthought but a resource to be reimagined. Every decision we make, from soil to plate, is part of the cycle. An ongoing effort to honor what exists and ensure it continues to thrive.
At Teruar Urla, we embrace a Soil-to-Plate philosophy, ensuring every ingredient we grow or source is treated with care and respect. We cultivate a variety of organic vegetables and fruits, aligning our harvests with the land’s natural rhythm and honoring the principle of seasonality.
Our commitment to organic and sustainable farming goes beyond the soil; we ferment, preserve, and age our produce to extend its seasonality, ensuring nothing goes to waste.

We collaborate with local farmers and artisans, ensuring every ingredient is sourced with care and quality. Our partner farmers are selected based on their commitment to ethical and sustainable farming, supporting biodiversity and soil health.
By working with producers who share our values, we extend sustainability beyond our own land, contributing to a more responsible food ecosystem. At the same time, we are proud to support local employment by prioritizing team members from Urla and the surrounding villages, further enhancing our commitment to the local community.

Waste management is not just a necessity but, when approached thoughtfully, it enriches the soil, sustains life, and fosters kindness. At Teruar, we continually refine our methods, always searching for more efficient and sustainable ways to repurpose kitchen and garden waste.
Our custom-designed compost machine processes up to 300 kg of organic waste daily, turning it into nutrient-rich compost for the soil and wholesome food for stray animals within just 24 hours. Natural waste from our kitchen and garden returns to the earth as compost, while food scraps are carefully sorted to remove harmful ingredients before being repurposed into dry pet food. Using our pellet machine, these meals are formed, nourishing our own companions and offered as gifts to guests, encouraging them to share with stray animals.
As the first restaurant in Turkey to incorporate pet food production from kitchen waste into its cycle, we are proud to share kindness in the most sustainable way, believing that small actions can create a meaningful impact.
